The shock chambers are cooling devices of the new generation, which constitute an important link of the technological chain of thermic processing of food products. We offer two kinds of shock cooling chambers: - cooling – the range of temperatures of the input product +80˚C ÷ +2˚C,
- freezing – the range of temperatures of the input product +35˚C ÷ -20˚C,
SHOCK COOLING CHAMBER. The task of the shock cooling chamber is the quickest possible cooling of the entered product, according to technological requirements. The chamber realizes the cooling of intermediate food products, which are settled on the shelves of a typical gastronomic trolley, from the temperature of +80oC (max), to the temperature of +5oC, in the time of 2,5 hours (depending on the kind, amount, and level of disintegration of the product). This way of cooling stops all putrefaction processes (which decline by +7oC) and allows for the storage of food products (at the temperature of 0oC ÷ +3oC) up to 5 days without the change in quality SHOCK FREEZING CHAMBER The task of the shock freezing chamber is to exceed the temperature -5oC ÷ -7oC as quick as possible (in the time from 30 to 60 minutes), in the entire cross-section of the product of the input temperature of +30 oC. This action is performed with the aim of stopping all biological processes within the product (such as fermentation, putrefaction processes, etc.), and restricting the growth of crystals of ice which tend to appear during the conventional long-term freezing process. This enables to lengthen the time of storage and the preservation of nutritional, taste, and dietetic values after the product is defrosted. The process of shock freezing also reduces the so-called “shrinkage”.
 | | VERSIONS OFFERED FOR SALE Standard version – on the basis of a sandwich panel with a polyurethane core, covered with a rustproof plate. Minimum version – on the basis of a sandwich panel with a polystyrene core, covered with an enemeled steel plate. There is also a possibility of producing a chamber with a two-door system (the through-passage system), or with a single-door system.
